What you will need!

Green Goddess Dressing

150gms Greek Yogurt

50gms Fresh Herbs (Coriander, Mint, Basil, Parsley, Dill and Spring Onion)

2gms Garlic paste

Salt, as per taste

Pepper, as per taste

Lemon Juice, as per taste

 

Roasted Pepper

250gms Peppers, whole

25ml Olive Oil

Salt, as per taste

Pepper, as per taste

 

Ingredients for Assembly

4slices English Oven Roasted Garlic Sub

10gms Onions, sliced

Coriander, handful

How to make

Putting it together

Combine all the ingredients for Green Goddess Dressing except lemon juice in a blender jar and pulse it until smooth.

Take it out in a bowl, squeeze in the lemon juice, mix and keep it aside for later.

Preheat the oven at 200c

Line a baking tray with parchment paper and lay all the peppers on it.

Drizzle oil, salt, pepper and massage the veggies.

Grill them until nicely charred on the outside and soft.

Peel the skins off the peppers and keep aside.

Take couple of slice of English Oven Roasted Garlic Sub

Apply a generous amount of green goddess dressing on the bottom slice and then layer the onions.

Add the roasted peppers and close the sandwich

Garnish with coriander, cut into it and enjoy!
